I’ve been having a lot of stomach problems recently. Initially I contributed it to stress and to having too much going on. Then I realized it may be what I eat as well. I am currently going to start weening off of meats because I’m noticing the stomach nausea and pains come when I eat meats. The only meat that does not seem to bother me is fish. I’ve always eaten meat so this will be difficult but if I feel better then I’m all for it.
In respect to trying to cut out meats, the following recipe is simple and does not include meat. I love making this dish because it’s easy and feeds me for a few days and tastes wonderful!
Ratatouille! Yes, I love the movie too!
You will need:
1 onion, sliced (I use a yellow onion)
minced garlic (to taste)- I LOVE garlic
olive oil (to saute the veggies)
eggplant (I cube it)
1 bell pepper (I used yellow)
at least 1.5 cups of chopped tomatoes (I chopped my own but you can use canned)
oregano (to taste)
thyme (to taste)
ground coriander (to taste)
fennel seeds (to taste)
basil (to taste)
I grow my own herbs, so the oregano/thyme/and basil came from a real plant. I pick off the leaves and chop them. You can use ground though. Here are the steps:
cook the onion and garlic with some oil over low-medium heat until the onion is softened
add more oil and increase heat to medium-high (do not smoke)
add eggplant and cook for about 8 minutes
add zucchini and bell pepper and cook for about 12 minutes
stir in tomatoes and cook for about 6 minutes
once all veggies are tender add oregano, thyme, coriander, fennel seeds, salt, pepper to taste (I never measure my spices, I have a bad habit for that)
cook, while stirring, for 1 minute
stir in basil
Soooo simple and delicious! It makes great leftovers too!
For exercise: I took the day off. I’m confessing. I’m actually a little sore and since my stomach has been feeling really crummy, I decided to rest up for today. Tomorrow I will get back to it! I will try and do some yoga this evening before my meditation so that I can feel a little more refreshed for tomorrow!
